Pulao Rice with Chicken Madras and Tzatziki

"I am basically a British Asian, so you can see my recipes are from India/Pakistan mainly. Me and my family love the taste of these dishes. and I am sure judges will like them as well."

Ingredients

  Pulao Rice:

  • Basmati rice   1 cup

  • Oil  2 tbsp

  • 1 small Onion

  • Tomato puree 1/2 tbsp

  • garlic paste  1 tsp

  • Cumin  1 tsp

  • turmeric powder  1/2 tsp

  • Green chilli  1

  • Red chilli powder  1/2 tsp

  • Chicken powder  1 tbsp

  • Salt as required

​ Chicken Madras:

  • Boneless chicken thai   250 g small pieces

  • Onion  1

  • Oil  2-3 tbsp

  • Garlic chopped  1/2 tbsp

  • Ginger chopped  1/2 tbsp

  • Tomato  1

  • Curry leaves fresh  5

  • Green chilli  1

  • Fresh coriander  as required

  • Salt

List 2:

  • 35-40 g tomato puree

  • Fenugreek leaves   1/2 tsp

  • Coriander powder  1/2 tsp

  • Crushed fennel  1/2 tsp

  • Red chilli powder  1/2 tsp

  • Lemon juice  1/2 tbsp

  • Water  1/2 cup

Tzatziki:

  • Yogurt  250 g

  • Garlic 1 clove (make paste)

  • Cucumber (take out skin and seeds then grate )  1/4 cup almost

  • Mint  3-4 leaves chopped

  • Extra virgin olive oil  1/2 tbsp

  • Salt

Method

Pulao Rice:

1. Soak rice for 10-15 minutes.

2. in a pan add oil and sauté sliced onion for 1 minute.

3. Add garlic paste, cumin, tomato puree, Turmeric powder, green chilli, red chilli powder, salt.

4. Stir for a few seconds.

5. Add in 2 cups water with 1 tbsp chicken powder.

6. Let it boil.

7. Then add rice ,cook on high heat until all water dries.

8. Sprinkle 1 tsp white vinegar and turn the heat low.

9. Cover with lid and cook on very low heat for 10 minutes.

10. Done 

Chicken Madras:

1. Mix all list 2 ingredients and set aside.

2. Finely slice 1 onion and sauté it in 2-3 tbsp oil until light brown.

3. Add in ginger, chopped garlic, stir few seconds.

4. Add in chicken, stir until all extra juices from chicken evaporates.

5. Now add all list 2 ingredients and salt as required.

6. Boil 5 minutes.

7. Add in 1 skinless, finely chopped tomato, cook few seconds.

8. Add in curry leaves, green chilli and turn the heat low.

9. With lid on cook it for 5-6 minutes.

10 .Sprinkle with coriander - serve.

 Tzatziki:

​1. Mix all ingredients - serve.
