Chicken lime & ginger tacos with home-made tortillas

"I chose this recipe to represent my Mexican side. I also love this recipe because it is such a great variety of amazing flavours- I love the bright ingredients used and it tastes amazing."

Ingredients

Tortillas:

  • 300grams All Purpose White Flour

  • 125ml Warm Water

  • ½ teaspoon Fine salt

  • 3 tablespoons Oil

 

Chicken:

  • 2 Chicken breasts

  • 2 Tablespoons Oil

  • 2 Limes

  • Paprika

  • Cumin

  • Cajun seasoning

  • Ginger root

  • Ginger powder

  • Chili flakes

 

Guacamole:

  • 2 Large Avocados

  • 2 limes

  • Tablespoon Milk

  • Salt & Pepper

 

Salsa:

  • 2 Large Organic tomatoes

  • 2 Red Onion

  • Bunch Cilantro

  • Salt & Pepper

  • 3 Garlic cloves

Method

1) In a bowl combine flour and salt in a measuring jug mix together warm water and oil.

2) Combine with the flour mixture need whilst doing this, when it's fully combined need for 2-3 minutes.

3) Half dough and roll into very thin circles.

4)Add one of the tortillas into the pan with a bit of oil t(pan has to be hot) cook for one minute then flip over and cook for a minute on the other side .

5)When they come out place them in a mug to keep the taco shape.

6)Cut the chicken and place in a pan with oil, cumin, cumin seeds, ginger

spice, salt and pepper and chilli flakes.

7) In a food processor add tomato, red onion, salt and pepper and cilantro to make salsa.

8)In a bowl mash together avocado milk salt and pepper and lime.

9)Now assemble the chicken, guacamole, salsa then top with finely diced tomatoes and red onion then add grated ginger and lime top with oregano and done.
